Familiar fare to those on a budget, ramen gets elevated to an entirely new plateau as Chopsticks Cafe's star entree. Vegetable, seafood or beef variations are all available at the same price.
I chose the medium-spicy seafood, and the bowl arrived steaming like a volcano. Everything was incredibly fresh, from the silken, slightly chewy noodles to the stalks of scallion just beginning to wilt in the savory broth. A glistening egg yolk lay nestled among strips of calamari, pieces of octopus, tiny shrimp and mussels. Once pierced, the egg slipped among the noodles and solidified into pillowy bits among the soup, while the yolk created an unctuous mouth feel. An insidious heat added another layer of flavor. I was experiencing noodle nirvana, and when the cook told me they were thinking of changing the name to Chopsticks Ramen Cafe, I heartily agreed.
