Stuffed wontons are a perennial favorite. I have a friend who requests them for Thanksgiving, barbecues and any other occasion she can. Their beauty lies in their versatility. They can be savory or sweet, steamed, boiled or fried. Sauce, no sauce, in a salad or as an appetizer, wontons can find a place in any meal.

Lahn Pad Thai serves them up as a deep-fried starter. It's a straightforward version with minced pork, green onions and spices. The dipping sauce is soy with bias-cut scallions and a generous scattering of red chili flakes. A touch of vinegar and sugar accents the richness of the pork. These little dumplings crackle in the mouth, redolent of garlic and pepper. I happily ate my portion, enjoying the intermingling of spicy and sweet, and thought of my friend, who would surely be accompanying me on my next visit to get her share.
