Video: Smoking and canning Alaska salmon (abridged)

Philip Tschersich makes videos about his life in Kodiak. His subjects are mostly solo adventures on the island, hiking and sea kayaking. Tschersich's wife, Adelia Myrick, has a setnet site on the west side of Kodiak and in mid-July sent home a tote of fish for Tschersich to process. He decided to document his methods to share with his friends. "I made the video because when I give friends my smoked canned salmon, they all want the recipe, but when I give them the detailed instructions written out, they seem intimidated or they say it doesn't turn out quite right," Tschersich said. This short video is informative but, more than anything, entertaining. From Tschersich's point of view, we see him cleaning his salmon catch, then smoking and canning fillets, all at record speed. He says his canning technique is something he picked up 15 years ago when he worked at Bear Lake Lodge on the Alaska Peninsula.
