Watch: The fall harvest at Spring Creek Farm

The fall harvest at Alaska Pacific University's Spring Creek Farm in Palmer is a busy but exciting time for farm workers.

"This is that time when those nights start to get chilly," said production manager Joshua Faller. "The best thing is to sit down in front of a fresh bowl of potato leek soup."

Farm workers and volunteer students are harvesting potatoes, leeks, beets, turnips, broccoli, fava beans, kale and other vegetables from the six-acre vegetable farm.

"We can grow all this great stuff here, and it does take time." said production manager Joshua Faller. "It takes time to cultivate, it takes time to grow. This is the reward for a season of hard work."
